For the Yogurt Sauce
- 0.5 cup 2% plain Greek yogurt
- 1 tbsp lemon juice
- 1 tsp garlic
- 2 tsp olive oil
- 1 tbsp fresh dill
- 2 tbsp water more or less to thin sauce
For the Rice and Vegetables
Wash your rice until the water runs clear. Cook using your preferred method according to the directions on the package. I used a rice cooker and for 270g off dry rice, I filled with water to just shy of the 2 mark.
Wash and peel the carrots. Using the large holes of a box grater, shred the carrots and zucchini.
Cut the onion into thin slices, roughly chop the dill, and zest the lemon.
Heat a large skillet over medium high heat and add 1 tbsp of oil. Add the onions first and season lightly with salt. The goal here is to get some
Add the zucchini and carrots and continue cooking for 3–5 minutes or until the vegetables have softened and any excess water has cooked off.
Add the cooked rice and stir to combine. Turn off the heat and mix in the dill, lemon juice, and lemon zest. Taste and adjust with salt as needed.
For the Beef
Heat a large skillet over medium high heat and add 1 tbsp of oil. Add both packages of ground beef and season with salt and pepper. Break the beef into smaller pieces as it cooks. The reason for the 2 different kinds of beef is because the extra fat is nice for the flavor. Mixing the leaner beef in helps to make it more macro friendly. If you want a leaner meal, you don't have to include the fattier beef. When the beef is mostly browned, create some space in the center of the skillet, allow the oil to pool, and add the spices to bloom. Cook for about 30 seconds, then stir them into the beef.
Next add in the garlic and lime zest and stir to incorporate. Cook until the beef has finished and then stir in the lemon juice. Stir, taste test, and adjust with salt and pepper to taste.
For the Yogurt Sauce
Add the Greek yogurt, lemon juice, minced garlic, olive oil, dill, and water to a small bowl. Stir until smooth.
Divide the yogurt sauce into 5 small containers and store separately.
