Chocolate Chip Puffed Rice Cookies

Dry Ingredients
- 2 cups puffed rice cereal
- 6 tbsp oat flour
- 1 tsp baking soda
- ¼ tsp salt
Wet Ingredients
- 1 egg
- ½ cup unsweetened applesauce
- 1 tsp vanilla
- 2 ½ tsp stevia
- 2 tbsp mini chocolate chips
Preheat oven to 325°F. Mix dry ingredients and wet ingredients separately. Combine into one bowl with half the chocolate chips.
Allow the “dough” to rest and hydrate for a few minutes before scooping.
Grease a sheet pan. Using a cookie scoop place the dough onto the pan. Form into cookie shape, top with remaining chocolate chips. I yielded 11 cookies.
Bake 10 minutes.
