Ingredients

Dry Ingredients

  • 2 cups (34 g) puffed rice cereal
  • 6 tbsp (40 g) oat flour
  • 1 tsp (4 g) baking soda
  • ¼ tsp (1 g) salt

Wet Ingredients

  • 1 egg
  • ½ cup (113 g) unsweetened applesauce
  • 1 tsp (4 ml) vanilla
  • 2 ½ tsp (10 g) stevia
  • 2 tbsp (28 g) mini chocolate chips

Instructions

  • Preheat oven to 325°F. Mix dry ingredients and wet ingredients separately. Combine into one bowl with half the chocolate chips.
  • Allow the “dough” to rest and hydrate for a few minutes before scooping.
  • Grease a sheet pan. Using a cookie scoop place the dough onto the pan. Form into cookie shape, top with remaining chocolate chips. I yielded 11 cookies.
  • Bake 10 minutes.

    These are really good and so quick and easy to make. I love that I found a gluten-free cookie way more affordable than store-bought gluten-free cookies. They taste better too!
