Instructions
- Preheat oven to 325°F. Mix dry ingredients and wet ingredients separately. Combine into one bowl with half the chocolate chips.
- Allow the “dough” to rest and hydrate for a few minutes before scooping.
- Grease a sheet pan. Using a cookie scoop place the dough onto the pan. Form into cookie shape, top with remaining chocolate chips. I yielded 11 cookies.
- Bake 10 minutes.

These are really good and so quick and easy to make. I love that I found a gluten-free cookie way more affordable than store-bought gluten-free cookies. They taste better too!
