Grilled Chicken Breast Sandwiches
Grilled chicken breasts marinated in a number of different ingredients to develop flavor. Sometimes I like to use waffles as buns, other times i'll use regular buns. A remoulade is spread on the bun and each thigh is topped with an arugula salad.

For the Remoulade
- 3 tbsp mayonnaise
- 2 tbsp dill relish
- Lemon juice to taste

- 5 hamburger buns
- 1 large tomato
For the Chicken
Pound the chicken breast so it is of even thickness throughout. You want it to be around ½ inch thick for optimal cooking. Cut into 5 pieces that are roughly bun sized.
In a bowl mix together the chicken marinade. Stir and adjust flavor as preferred. Add chicken & marinade at room temp for 30 minutes. Start your grill.
Grill the chicken for 3-4 minutes on each side or until cooked through.
Plating
Cut the tomato.
Toast the waffles/buns.
Spread a layer of the mayo on each bun. Top with chicken, tomato, and salad mix.
