Grilled chicken breasts marinated in a number of different ingredients to develop flavor. Sometimes I like to use waffles as buns, other times i'll use regular buns. A remoulade is spread on the bun and each thigh is topped with an arugula salad.

Ingredients

  • 20 oz (568 g) boneless skinless chicken breast cut into 5 pieces
  • 4 tsp (20 g) Dijon mustard ⁣
  • 2 tsp (10 ml) soy sauce ⁣
  • 1 tsp (3 ml) garlic powder ⁣
  • 2-3 tbsp (30 ml) lemon juice ⁣
  • 1 tbsp (15 ml) olive oil⁣

⁣For the Salad

  • 3 oz (85 g) arugula ⁣
  • 1 tbsp (15 ml) olive oil⁣
  • 1 tbsp (21 g) honey ⁣
  • Lemon juice to taste ⁣
  • 1/4 cup (40 g) feta cheese ⁣
  • Salt ⁣

⁣For the Remoulade

  • 3 tbsp (45 g) mayonnaise
  • 2 tbsp (30 g) dill relish ⁣
  • Lemon juice to taste ⁣
  • 5 hamburger buns
  • 1 large (125 g) tomato⁣

Instructions

For the Chicken

  • Pound the chicken breast so it is of even thickness throughout. You want it to be around ½ inch thick for optimal cooking. Cut into 5 pieces that are roughly bun sized.
  • In a bowl mix together the chicken marinade. Stir and adjust flavor as preferred. Add chicken & marinade at room temp for 30 minutes. Start your grill.⁣
  • Grill the chicken for 3-4 minutes on each side or until cooked through.

For the Salad

  • Mix together the arugula, oil, lemon, honey and feta. Adjust flavor as needed. ⁣

For the Remoulade

  • Mix together the mayo, relish, and lemon juice. Pepper to taste. ⁣

Plating

  • Cut the tomato⁣.
  • Toast the waffles/buns. ⁣
  • Spread a layer of the mayo on each bun. Top with chicken, tomato, and salad mix. ⁣
