Grilled Chicken Thigh Sandwiches

Grilled chicken thighs marinated in a number of different ingredients to develop flavor. Sometimes I like to use waffles as buns, other times i'll use regular buns. A remoulade is spread on the bun and each thigh is topped with an arugula salad.

Ingredients

⁣For the Salad

⁣For the Remoulade

  • 3 tbsp mayonnaise
  • 2 tbsp dill relish ⁣
  • Lemon juice to taste ⁣
  • 5 buns
  • 1 large tomato⁣

Instructions

For the Chicken

  • In a bowl mix together the chicken marinade. Stir and adjust flavor as preferred. Add chicken & marinade at room temp for 30 minutes. Start your grill.⁣
  • Grill the chicken for 3-4 minutes on each side or until cooked through.

For the Salad

  • Mix together the arugula, oil, lemon, honey and feta. Adjust flavor as needed. ⁣

For the Remoulade

  • Mix together the mayo, relish, and lemon juice. Pepper to taste. ⁣

Plating

  • Cut the tomato⁣.
  • Toast the waffles/buns. ⁣
  • Spread a layer of the mayo on each bun. Top with chicken, tomato, and salad mix. ⁣
