Preheat oven to 350°F
Sift flours so no clumps remain. Mix the flours together with casein until incorporated.
In a separate bowl mix the vanilla, splenda, applesauce, yogurt, and eggs.
Stir the wet ingredients and dry ingredients together in a large bowl.
Spray an 8x8 or loaf pan with oil. Pour mixture in. Spread it evenly. Bang it against the counter to get as much air out as possible. If you use an 8x8 you may need more chocolate for the topping because of the extra surface area.
Bake for 24 minutes if using an 8x8 or 30-35 minutes if using a loaf pan. Check doneness using when a toothpick inserted comes out clean.
Allow to cool. Once cooled melt the chocolate chips and butter together. Pour over top and allow to harden.
