Ingredients

  • 3 tbsp (48 g) liquid egg whites (1 egg white)
  • 2 tbsp (15 g) coconut flour⁣
  • 1 scoop (30 g) vanilla casein protein powder
  • ½ tsp (2 g) stevia⁣
  • 3.5 tbsp (50 g) plain non fat Greek yogurt
  • 1 tsp (5 g) rainbow sprinkles ⁣
  • 2 ⅓ tbsp (35 ml) water

Instructions

  • Preheat oven to 350°F. ⁣
  • Mix the dry ingredients together until incorporated making sure there is no clumping. ⁣
  • Add in the Greek yogurt, egg whites and water. Stir to form dough. Add in sprinkles. ⁣
  • Use a cookie scoop to create balls and place on a greased cookie sheet. If you don’t have a scoop make ~1” balls. ⁣Makes 7.
  • Bake for 18-20 minutes.

    Great Recipe! Have you ever tried using a funfetti cake mix instead of the coconut flour and removing the rainbow sprinkles (as the mix already contains)? If you haven’t, I highly recommend.

      I haven’t. This is actually a very old recipe that I haven’t revisited in years. It may be ready for an update

    Could a substitution of oat flour work in lieu of coconut flour? If not, could a possible revision be in the works with some of your commonly stocked and regularly used ingredients?

      Coconut flour is more absorbent so you may have to add more oat flour

    nope. just nope. i wanted to like these who doesn’t like funfetti? but mine turned out to SUPER dry…and i choked them down anyways. maybe it was the coconut flour? idk. next time i will try not to bake them for 18 min.
