Ingredients
- 2.5 lbs (1135 g) boneless skinless chicken thighs
- 1 ½ cups (225 g) cooked rice
- 1 lb (454 g) green beans
- ½ medium (100 g) onion
- 2 cups (300 g) frozen mixed vegetables
- 2 (2) eggs
- 4 tbsp (60 ml) soy sauce
- 3 tbsp (45 ml) Sambal olek
- 2 tbsp (42 g) honey
- 1/4 cup (60 ml) water
- 1 tbsp (8 g) cornstarch
- 1 tbsp (15 ml) water
- 2 tbsp (30 ml) olive oil
Instructions
For the Rice
- Cook enough rice to yield 1 ½ cups. It’s best if you have day old rice but fresh rice will work.
- Dice ½ an onion and sauté in a pan with ½ tbsp olive oil until soft. Add in thawed frozen vegetables. Crack the eggs in and scramble. Stir in rice. Add 2 tbsp soy sauce and season with pepper to taste.
For the Chicken
- Heat a skillet/grill pan over medium heat and cook the chicken. Cut into 1 inch chunks and add back to pan to brown.
- In a sauce pan add 2 tbsp soy sauce, 2 tbsp honey, 3 tbsp Sambal and ¼ cup water. Bring to a light boil.
- Make a slurry with the cornstarch and 1 tbsp of cold water. Reduce heat and stir into sauce to thicken.
- Coat meat with sauce.
- If you use raw green beans, boil or cook them as preferred.
