Mediterranean Quinoa Bowls

This dish packs a ton of flavor into every bite. The tangy vinegar flavor in the beef, the feta cheese topping, and the hummus make for a number of flavors layered into every bite. The paring of beef and quinoa is a satiating combination that will leave you full, longer.

Keep coming back to this, the combination of flavors is great!

You’d heat this (minus the hummus cup), not eat cold, right?

I had this two different ways. I made it as is with the hummus and I wasn’t a fan. I honestly think I would have liked it more if I’d made it with the weight-loss ingredient turkey instead, but it needed more tang with the beef. The second day I ate it with leftover tzatziki sauce I’d made for another meal on here and it was significantly better, but probably not one I’d make again. It was definitely filling, though! I’ll finish these off with the tzatziki sauce and not the hummus. (I LOVE hummus but I’ve never thought hummus and ground beef went together very well)
