Ingredients
- 28 oz (794 g) chicken sausage
- 4 medium (1000 g) sweet potatoes
- 1 medium (200 g) sweet onion
- 2 medium (300 g) red peppers
- 12 oz (340 g) frozen cut green beans
- 2 tbsp (30 g) oil
- salt and pepper to taste
Instructions
For the Skillet
- Preheat your oven to 425°F.
- Wash and cut your onion, sweet potatoes, and peppers into a medium dice. Cut your sausage into thin slices on a bias.
- In a large bowl, add the onion and sweet potatoes. Toss in 2 tbsp of oil.
- Spread the onions and potatoes out on a large sheet pan. Bake for 12-14 minutes, remove from the oven and turn. Cook an additional 12-14 minutes or until you are happy with the browning on the potatoes.
- Place the sausage and peppers on another sheet pan. Try to get the sausage to lay flat on the pan as this will allow it to brown. Add to the oven and cook for 8-10 minutes then flip and cook an additional 5-8 or until the sausage has browned.
- Cook the green beans in the microwave according to the packaging. Drain as much water from them as possible after cooking.

So easy and so good with some jalapeño chicken sausage. Perfect mix of sweet and spicy. I was bit skeptical but it’s perfection.

This was amazing, I used smoked paprika and garlic powder on the sausages and peppers and it was great!
This recipe was very good, made it this week and I changed it a little bit by adding in a blend of cumin, garlic and onion powder, salt, cayenne pepper and ground coriander to season the sausage and veggies. It was super easy to prepare although I did have to pan fry the sausages first as the ones i bought didn’t hold their shape when cutting it into slices raw.
Got air fryer recently so this is my go-to recipe, sometimes i top it with kimchi

Just made this today for meal prepping the work week. Was easy, fast and really good! I’m not the biggest sweet potato fan, but everything together makes it all taste good. I toss in a little sriracha for the heat, great recipe!
Excellent weeknight meal. I like to add some garlic parm seasoning to it to give the veggies a little more flavor, but it definitely doesn’t need it. The flavor of the chicken sausage, no matter what kind you use, is usually enough.
I loved this!! I tended to use a lot of seasonings on things in the past. but I’m starting to prep my meals and eat better/healthier so I’m cutting down on that, let me tell you this doesn’t need alot of seasoning on it! I only put salt and pepper like the recipe says and it was delicious. I used a mix applewood smoked chicken sausage and apple chicken sausage and the flavors were amazing definitely making this one on the regular. So glad I choose to make this recipe first for my meal prep journey it was so easy!
Delicious, greater than the sum of its parts
It was pretty good, everyone that tried loved it. I wasn’t very into it but I don’t like green beans a lot so maybe it would’ve been better for me without it. I did think it was a little sweet for me. BUT it was perfect to freeze for multiple weeks and thaw
I’ve lost count of how many times I’ve made this recipe both as a meal prep for work lunches and as a family meal. It’s so easy to make and great for the times I don’t have the energy to do something more involved. This goes great with ajika seasoning.
Unlike Josh, I like all vegetables… except for green beans, which I absolutely hate. So I swapped those for the same amount of asparagus spears, and this dish is great. It is, as the name suggests, very sweet, so I added some garlic powder and red chili flakes after I was done cooking, but otherwise the sweet potato and chicken sausages really go well together. Awesome fall-time lunch.
