Very good recipe. Some notes/improvements would be to very lightly cook the zucchini. If you over cook it, it becomes mushy in the microwave. Also eating this with some crisp lettuce + Sriracha makes it 100% better. Trust me and try it. Eating an entire head of lettuce is only about 30 calories.
