Ingredients

For the Pasta

  • lbs (681 g) ground beef 85/15
  • ½ medium (100 g) onion
  • 1 cup (100 g) shredded carrots
  • 5 tbsp (75 g) tomato paste
  • ½ tsp (2 g) garlic powder
  • ½ tsp (2 g) chili powder
  • 1 tbsp (5 g) oat flour wheat flour is fine
  • 2 cups (480 ml) vegetable broth
  • cups (365 ml) milk 2%
  • ½ lb (227 g) brown rice penne Any pasta will work. I use Trader Joes Brown Rice Penne
  • ½ cup (56 g) cheddar cheese shredded
  • 3 cups (90 g) spinach
  • Salt and pepper to taste

For the Broccoli

  • 3 cups (510 g) broccoli 1-2 bunches
  • tbsp (22 g) olive oil
  • Salt and pepper to taste

Instructions

For the Pasta

  • Heat a large pot over medium high heat and add in the ground beef to brown.
  • Cut the onion and carrots into a small dice. Cut the spinach into smaller pieces to break up the leaves. I use shredded carrots to make the chopping easier but regular carrots also work.
  • Once the beef has browned, add in the onion and carrots and cook for 4-5 minutes.
  • Add in the tomato paste, vegetable broth, milk, oat flour, chili powder, and garlic powder. Stir to incorporate and raise the heat to bring to a boil.
  • Once the pot has begun to boil, add in the pasta, reduce the heat to low and cover. Cook for 7-10 minutes or until the noodles have softened. Cook times will vary depending on the type of pasta you use.
  • If you find that there is still a lot of liquid remaining in the pot, remove the lid and allow some of the liquid to boil off.
  • Add the cheese and spinach to the pot. Season with salt and pepper to taste.

For the Broccoli

  • Preheat your oven to 450°F.
  • Wash and cut your broccoli into florets. Toss in tbsp of olive oil. Spread the broccoli on to a couple of sheet pans.
  • Cook the broccoli for 10 minutes then remove from the oven and turn. Cook for an additional 5-7 minutes.

  • This recipe makes 5 servings. Divide your ingredients evenly between 5 containers.

      No I would only make 10 meals if I was also prepping for my roommates. I don’t personally prep meals and plan to eat them more than 1 time a day

    One of the easiest and quicker meal prep recipes. I added celery because I had to do something with it before it went bad. Also, I actually ran out of garlic powder so I subbed it for a garlic salt + onion powder mixture. And, of course, hot sauce. I always like to give my foods a lil’ kick.

    This one is great, and I have to say that using macaroni noodles enhances it significantly. The macaroni noodles help everything fold in together more evenly and you get a nice amount of pasta with every bite.
