Recipe was exactly what I wanted it to be. Quick, easy, and cheap to make. You can use a 4 qt pot to make, but you are slightly pushing the size to the overflow state when you mix everything back in at the end.

Super easy, super quick and delicious meal! Only modification I had to make due to lactose issues in my household, was omit the milk and it STILL came out creamy!
For some reason I wasn’t expecting this meal to be all that great, but then I LOVED it. Can’t wait to make it again when I’m feeling in the mood for pasta.

This was good but turned out more like a soup? Maybe I added too much broth to try to cover, but I had some big pieces of chicken!
I did a variation of this and it was amazing!!! Instead of the one pot option we grilled the chicken and roasted the veggies. Then I made the same sauce that you use for the chicken enchilada bake (minus green chiles) and combine it all together. It was SO good. 376g serving was 535 calories and 50g of protein!
