Ropa Vieja is the national dish of Cuba and translates to “Old Clothes”.  This recipe is slightly modified from the traditional version to add more vegetables.

This is probably my favorite recipe to make/eat. It takes a really long time to make, but it uses one pot to cook in and simple enough to not screw it up. You can do your other meal prep, clean dishes, spend time with family, or even have an existential crisis while this one cooks and be done all at the same time. Best part is so delicious it hides away all the vegetables you add to it.

This sounds delicious, and Ropa Vieja is one of my favorite meals ever. Is this a recipe that would work well in a slow cooker by any chance?

I don’t have a Dutch oven, so I’d love to know if I can make this recipe in a slow cooker instead.
