Ingredients
For the Sausage
- 1 lb (454 g) ground pork 90/10 any ground meat is okay
- 1 tbsp (12 g) brown sugar
- 1 tsp (6 g) salt
- 1 tsp (3 g) pepper
- 1 tsp (3 g) cayenne pepper optional for spice
- 1 tsp (3 g) smoked paprika
- 1 tsp (3 g) onion powder
- 1 tsp (3 g) garlic powder
- 1 tsp (1 g) oregano
- 1½ tsp (2 g) rubbed sage
- 1 tbsp (15 g) oil
For the Oatmeal
- 3 cups (240 g) old fashioned oats
- ½ cup (60 g) oat flour any flour is fine
- 2 eggs
- 2 cups (480 g) 2% milk
- 1 cup (227 g) cottage cheese
- 1 cup (112 g) shredded cheddar cheese
- 1 tsp (4 g) baking powder
- ½ tsp salt
- 1 medium (150 g) green pepper
- 1 small (100 g) onion
- 1 tbsp (15 g) oil
Instructions
For the Breakfast Sausage and Peppers
- In a large bowl add the pork with all of the associated seasonings. Mix thoroughly to incorporate into the meat.
- In a large skillet over medium high heat, add 1 tbsp of oil and add in the sausage. Brown it on both sides and cook it until no pink color remains. Be careful not to burn the sugars.
- Break up the sausage into small pieces as it cooks and set aside until you are ready for it later.
- While the sausage is cooking cut your onion and pepper into a small dice. Once the sausage has finished, remove it from the pan and add another 1 tbsp of oil. Add the onions and peppers and cook for a few minutes to develop color. Season lightly with salt.
For the Baked Oatmeal
- Preheat your oven to 375 °F (191 °C).
- In a large bowl, beat 2 eggs, add the milk and cottage cheese and mix together.
- Next add in the oats, flour, baking powder, salt, sausage and peppers, and cheddar cheese. Mix to combine.
- Spray a 13"x9" pan with oil and add the oat mixture. Spread evenly across the pan.
- Bake for 40-45 minutes or until set in the center.
Plating
- This recipe makes 6 servings. Cut the oatmeal into 6 equal pieces.

I took a shortcut and used store-bought breakfast sausage but it turned out really well. I also used oat milk instead of regular to avoid the lactose and lean into the oat base of the dish.
I like how the peppers and onions complement the sausage and oats. I did drizzle on a teeny bit of hot sauce. Next time I might add mushrooms, too.
I doubled the meat and cut out the veggies (not in my breakfast!). This will be my weekday breakfast for at least the next month!
Hi, as always thanks for the recipes, but there seems to be a glitch in the calculator. I changed the servings to 6, as I usually do for every recipe, and just got home with enough ingredients to feed an army – 36 servings to be exact! 🤣
Just made this for the second time. This is such a great recipe for a filling and easy to take with you breakfast! I use turkey and this time I added an egg and reduced the oatmeal by half a cup. This will stay in the rotation! Thanks!

So good and easy to heat up and eat that it’s hard not to just eat it outside of breakfast time. But you can always make more.
