So you cook the chicken strictly by broiling? Not baking beforehand? I’ve never seen a recipe like that, so just making sure 😅

think of the broiler as simply an upside down grill. Anything you grill, can be done with a broiler.

This is the recipe that got me to sign up for a membership – and heck, Josh’s free content has already given me so much value so happy to give back. This recipe is my absolute favorite meal prep, and I don’t even like zucchini that much – except when its in this recipe!

Pro tips: Za’atar seasoning on the veggies. If you don’t like zucchini or carrots, cauliflower works well as a substitute or addition.

To the mayo sauce, I add 1/3 of a large cucumber finely diced, and minced fresh mint and dill, and you have got yourself a macro-friendly tzatziki sauce.

It barely changes the macros but the addition of the cucumber turns a small amount of sauce into what feels like a much larger amount – although I needed 2 ramikens per meal.

Really tasty recipe, I ended up doubling the amount of vegetables, but it was still fantastic. The spices on the chicken are great (though a bit spicy, my own fault). I agree with some of the other commenters though, adding some spices to the vegetables is delicious.
