Ingredients

  • 3 cups (240 g) old fashioned oats
  • 2 scoops (60 g) vanilla protein powder
  • 1 tsp (4 g) baking powder
  • 1 can (425 g) pumpkin
  • 8 tbsp (120 g) syrup
  • 3 eggs
  • 1 cup (240 g) 2% milk
  • 1 cup (227 g) cottage cheese
  • 1 tsp (4 g) pumpkin pie spice
  • ½ tsp (3 g) salt

For the Frosting

  • ½ cup (100 g) cream cheese
  • ½ cup (100 g) plain nonfat Greek yogurt
  • 2 tbsp (30 g) maple syrup

Instructions

For the Oatmeal Bake

  • Preheat your oven to 350 °F (177 °C).
  • In a blender, blend together the pumpkin, milk, cottage cheese, eggs, syrup, salt, baking powder, protein powder, spices and pumpkin pie spice until smooth.
  • Spray a 13"x9" pan with oil and add your oat. Pour in the pumpkin mix and stir thoroughly.
  • Bake for 50-60 minutes.

For the Frosting

  • Mix the cream cheese, yogurt, and maple syrup.
  • Place into a ziplock bag (or piping bag) and set aside.

Plating

  • This recipe makes 6 servings. Cut the oatmeal into 6 equal pieces. Once the oatmeal bake has cooled a bit, top with the frosting. I frost my oatmeal the day I cook it, it is probably better to keep your frosting in the fridge and frost the day of eating but it doesn't make a huge difference.

I’ve eaten this for three weeks straight for lunch at work. It’s so good! I used Naked’s Vanilla whey protein and it tasted great.

This has the taste and nearly the consistency of pumpkin pie, but for breakfast and with much better macros.

Would you be able to make a recipe that omits the protein powder?
