Ingredients
- 10 eggs
- 1 lb (454 g) ham steak
- 1 large (300 g) sweet potato
- 1 bunch (80 g) green onions
- 1 cup (112 g) shredded cheddar cheese
- ½ tsp (3 g) salt
- 1 tsp (3 g) pepper
- 1 tsp (3 g) garlic powder
- 1 tbsp (15 g) oil
Instructions
For the Egg Bake
- Preheat your oven to 350 °F (177 °C).
- Chop your green onion tops into ¼ inch pieces and the whites into thin slices. Wash and peel your sweet potato and shred it into small pieces using a box grater or cut it into very small pieces using a knife. Cut the ham into a large dice.
- Heat a large skillet over medium high heat. Add in the oil and brown the scallion whites and sweet potatoes for a couple of minutes to develop more flavor. Season very lightly with salt and pepper. The ham is already salty as is.
- Make room in the center and add the ham to brown up the edges.
- In a large bowl, crack 10 eggs and beat to combine. Add in the salt, pepper, garlic powder, green onion tops, and cheddar cheese. Stir to combine.
- Spray a 13"x9" casserole dish with oil. Dump the potatoes, onions, and ham into the bottom. Pour the egg mixture over the top and mix.
- Bake for 45 minutes or until set in the center.
Plating
- This recipe makes 5 servings. Cut the egg bake into 10 equal pieces and each serving is 2 slices. You can keep this in the casserole dish or move to meal prep containers for storage.

Great recipe. I add 1/2 tsp of baking powder and use a hand mixer on the eggs to get a sorta quiche texture, 10/10!
So delicious and easy! I added some everything bagel seasoning to the egg mixture just to give it more of that breakfast bagel flavoring

I love this recipe. I’ve been eating it for weeks, maybe months, straight. I buy the ham already cubed, stupid quick and easy to put together. I throw this together and let it bake while I prep my lunches (Josh’s ground chicken taco bowls right now) for the week and everything comes together in about an hour and a half.

Just made it yesterday, and I’m presently surprised. Swapped ham for spiced mince, since you can’t really get that type of maw where I live. It’s great, and reheats amazingly although next time I will try it with standard potatoes instead of sweet.
