I’ve made this dozens of times. I think it’s one of the easiest, tastiest, healthiest things Josh has come up with. A few notes:
If you’ve got a few extra minutes to prep, it can really help to bake your cubed sweet potatoes at 400 for 40 minutes. I hit them with a little turmeric and paprika. Also the longer you cook these onions, the better they’ll get. Killer recipe.
