For the Rice

  • Cook enough rice to have cups of cooked rice. 1 cup of uncooked rice will yield around 3 cups of cooked rice.

For the Vegetables

  • Wash and cut your red pepper and zucchini into a large dice. Cut your sweet onion into a large dice as well.
  • Cut your green beans into small pieces, about ¼" in length.
  • In a large skillet, heat some olive oil over medium high heat.
  • Add the onion first and cook for 2-3 minutes then make some room and add in the red peppers and zucchini. Cook until soft and remove from the pan. Season with salt and pepper to taste.

For the Turkey

  • Heat some olive oil over medium high heat. Add in the ground turkey and cook until browned.
  • In another skillet over medium high heat, add a bit of oil and the green beans. Cook for 4-5 minutes so that they can develop color. Add in 1 tbsp of minced garlic and cook an additional 2-3 minutes and season with salt to taste. Be sure not to burn the garlic.
  • Combine the turkey and green beans in one skillet. Add in 1 Tbsp of honey, Tbsp chicken stock, 2 tsp sriracha, and 1 tbsp soy sauce. Stir to incorporate and season with salt and pepper to taste.

Plating

  • This recipe makes 5 servings. Add ¾ cup of cooked rice and to each container and divide the remaining ingredients equally.

    Really wanted to try out this recipe. Grocery store was out of ground turkey, but I forgot I had ground chicken in the freezer. I thought the flavors would mix well with chicken as well. I was right. I added Korean chili flakes to the green beans for more of a flavor boost. Quick and easy recipe. Thanks!

    I made this recipe tonight. It was sooo good. I was skeptical of the sauce…would it be flavorful enough?! It totally was. Shows that you need less than you think to flavor things. When I started looking at labels I was shocked to see a tablespoon of olive oil contains 130 calories. Now when I watch cooking shows and watch the cook haphazardly throw in oil I cringe. That shit adds up fast!! Thanks Josh for taking the guess work out of heathy meal planning.!!

    Just a note: the video on this recipe shows you cutting 2 red peppers while the recipe in the index says 1 red pepper. I’ve come across this before with another recipe which I can’t recall at this moment.
